Who They Are

Poetic License believe in breaking traditions and being bold. It’s what keeps us thirsty and moves us forward. And it’s why we believe in our booze and our craft. When it comes to our handmade spirits, expect the unfamiliar. Additions here and omissions there have transformed the original you know so well, into something with much more character.

All we ask is that you lift up your wild spirit and listen to
your inner poet. If you can’t write it then live it, and drink it down. It’s how we’ve got to where we are today. Our flavours are how we express ourselves. We break the rules to find a tastier way. We believe in bucking the trend and being bold, and it’s why we believe in our booze and our craft.

Our distillery is based in Port  Owen on the west coast around Amelia, our 500-litre copper pot still, which lets us produce on a small batch, artisan scale. It’s here we create our  unforgettable flavours so you can enjoy our drinks with difference in mind.

Their Ethos

They say it was the cold sea air that broke his daze. When the drink dropped and smashed in all of its averageness. I can do  better, he realised. It was the moment he saw a different view washing in above the waves. No longer was he adrift or asleep. For the first time in too long, he was moving free and thinking clearly.

His spirit was awake and it was wild once again. Not a feeling like it, he thought. It’s just me and my poetic license from here on in. It was the end the tired familiar and the beginning of something wholly weird and wholly wonderful. It was his dawn of breaking the rules and creating better.

Northern Dry Gin

Juniper, Cardamom, Pepper, Citrus

Distiller’s Notes:
Expect a big punch of juniper that’s finely balanced with green cardamom for a warm and spicy flavour. With undertones of lemon and eucalyptus, the inclusion of Persian lime intensifies the citrus feel while adding a note of perfume. As for the other botanicals…well, that’s our secret for now.

Mixing Tips:
The gin drinker’s choice, specifically crafted to standout in many gin-based cocktails. The sweet and bitter flavours of a Negroni or the sharp citrusy flavours of a classic Gin Sour are well complemented by this powerful, floral gin.

Perfect Pour:
Over ice with premium tonic, garnished with pink grapefruit.

Old Tom Gin

Juniper, Sweetness, Rose, Oak

Distiller’s Notes:
This classic from the mid- 1800s delivers a sweeter and more peppery taste in comparison with our Dry Gin. From the botanicals alone we nurture its sweet taste, while our oak casks continue to add flavour and colour. The inclusion of rose petals infuses a distinct character to the  sweetness as well as a slight rose gold tinge.

Mixing Tips:
The sweet notes of our Old Tom Gin thrive in more subtle cocktail recipes. Ingredients like lavender and rose add a good balance whereas bolder ingredients such as anise, juniper and clove could mask its delicate flavours and are best used sparingly.

Perfect Pour:
Over ice with premium ginger ale, garnished with red apple and a snap of cinnamon.

Strawberry & Cream Gin

Juniper, Strawberry

Distiller’s Notes:
Best enjoyed sat on a checkered blanket in the park with friends while the sun is  shining. It is a beautifully fruity gin, smooth in texture and in taste, with a strong strawberry nose as well as more typical gin notes of juniper, coriander and orris root. For added strawberries and creaminess, we distilled as well as infused with the botanicals which also give its deep red colour that tints to a blushing pink when mixed with tonic.

Mixing Tips:
Offers a summer take on many a gin cocktail. Try as a Summer Fruit Cup with lemonade, mixed fruit and a sprig of mint or with fizz for a Picnic Royale.

Perfect Pour:
Over ice with elderflower tonic, garnished with a fresh strawberry.

Fireside Spiced Gin

Juniper, Mulled Winter Fruits

Distiller’s Notes:
To be enjoyed while cozying up around glowing amber warmth of the fireplace. As well as usual gin notes coming from juniper, coriander and orris root, there is a sweetness from dried winter fruits but also a zingy freshness from clementine. The mulling spice blend of cinnamon, clove and star anise gives a warming flavour reminiscent of your favourite seasonal treats, sure to warm you from the inside out!

Mixing Tips:
Mix with ginger ale warmed through and a little honey and extra mulling spices for the perfect winter warmer.

Over ice with premium tonic, garnished with cranberries and an orange peel.

Aquavit Spirit Aperitif

Aquavit: water of life

Background.

With its origins dating back to the 15th century, Aquavit is a Scandinavian spirit infused with botanicals and herbs like caraway, dill, aniseed and fennel. Aquavit can be matured in oak cask, or enjoyed as a clear, unaged spirit. Our unaged version of this age old Nordic drink harnesses its complexity form the inclusion of a variety of botanicals to compliment the caraway.

Through a triple distillation using our copper pot still, we are able to create a complex and spicy, yet soft and balanced Aquavit that will leave any Viking salivating for more.

Distillers notes:

Pure notes of caraway is perceived on the nose as well as the pallet. Crisp, minty characters from the aniseed and dill are finely balanced with subtle notes of liquorice. The inclusion of citrus adds a zesty mouthfeel that compliments the complex bouquet of spices. Delicate notes of butterscotch adds to a create a soft and lasting mouthfeel.

Perfect Pour:

Served straight from the freezer in a chilled glass. Poetic License Aquavit works beautifully as a digestif and paired with seafood. Also works well when chased with a good beer
